hawaiian bbq chicken over steamed rice
spray the inside of your slow cooker with canola oil cooking spray, then place 1.5 pounds of fresh boneless skinless chicken breast in, covered with one 16 ounce bottle of your favorite bbq sauce (I used Kroger's Honey BBQ). place one can of pineapple slices spread out covering the chicken, then pour half of the pinapple juice over top. cook over low heat for 6-8 hours or on high for 4 hours. after cooking, shred chicken with two forks and mix everything. serve with steamed basmati rice. makes 6 large servings.
one serving of hawaiian bbq chicken: 315 calories | 3/4 cup of cooked rice: 144 calories

pigs in a blanket and mac and cheese
prepare kraft mac and cheese using a dash of skim milk and a tablespoon of heart smart butter. wrap light turkey hot dogs in reduced fat crescent rolls.

dice: one red bell pepper, one green bell pepper, half a small red onion, place in bowl and mix with one can of drained sweet yellow corn and one can of rinsed and drained black beans. toss with 2 tablespoons balsamic vinegar, 1 tablespoon olive oil, 1 tablespoon cider vinegar, ¼ cup of sugar, and a pinch of salt and pepper. chill in the fridge for 30 minute and serve with multigrain chips.
half a cup of caviar: ~50 calories
buffalo chicken dip
boil and shred 4 chicken breasts. mix with one cup of fat free ranch, 1 cup of chopped celery, 2 sticks of fat free cream cheese, 1 full bottle of frank's red hot sauce and half a bag of 2% shredded cheddar cheese. bake at 350 degrees for 30 minutes. top with remaining cheddar cheese and serve hot with multigrain chips and celery.
