texas caviar


texas caviar
chop up one red bell pepper, one green bell pepper,  and half of a small red onion - place in a bowl, add one can of drained sweet corn and one can of black beans (rinsed until water runs clear). add two tablespoons of balsamic vinegar, one tablespoon of apple cider vinegar and one tablespoon of olive oil. mix in 1/4 cup of sugar and a pinch of salt and pepper. chill in fridge for at least 30 minutes and .serve with your favorite type of chip (I think it is best served with wheat scoops).

one large serving (1/12 of total recipe): only 82 calories (plus your chips)
