lightened up zucchini bread
grate (I used a food processor) two whole zucchinis and place in a bowl (about 2 cups once grated). mix three cups of all-purpose flour with a teaspoon of salt, a teaspoon of baking power, a teaspoon of baking soda and 3 teaspoons of cinnamon in a large bowl. in another bowl, beat 1 cup of unsweetened natural applesauce with three teaspoons of vanilla extract, 2 eggs, 2 1/4 cups of sugar (you can use a combo of white and brown sugar). stir two bowls of wet and dry ingredients together until well blended. miz zucchini into the batter and then pour into two pre-sprayed and floured loaf pans. bake at 325 degrees for 40-50 minutes, or until a toothpick comes out clean. serve spritzed with parkay (0 calories) or with with a pad of your favorite butter/margarine. makes 16 large slices!
