crock pot potato soup topped with broccoli and cheese
in a large crock pot, mix two cans of low sodium chicken broth with one can of 98% fat free cream of chicken soup. add one whole bag of shredded breakfast potatoes. cook over low heat for 6-7 hours. about one hour before serving, chop up one bar of fat free cream cheese into small pieces (to help it to melt), half a bag of 2% mild cheddar cheese and cook until ready to serve. serve topped with your favorites, here it is topped with broccoli and cheese (bacon bits are good too). makes 8 large servings.

stove top chicken and dumplings
boil and break up one pound of fresh boneless skinless chicken breasts. leave in remaining water and add five chicken bouillon cubes and one can of 98% fat free cream of chicken soup, cook over medium heat until mixture is smooth and cubes are dissolved. add one package of biscuits (10 biscuits) to top of pot, cover and simmer over low heat for 8-10 minutes. makes five large servings of two biscuits each.
